Four storefronts sit side by side on the even-numbered side of Washington Street between 5th and 6th. All four have changed tenants or are in the middle of changing. Two reopened this summer and two have not opened yet. Taken together, the new tenants point the block toward a different time of day than the old ones did.
For two decades, this stretch had a gelato counter at the corner and a BYOB taqueria mid-block that made margarita and sangria pitchers on the spot. As of this fall, the corner is a slow-fermentation bakery serving breakfast scrambles. Two doors up is a gluten-free bone broth kitchen. The two dinner-leaning tenants that remain are the two that haven't opened.

What the block was built around
The tenant that anchored this block's reputation was Charrito's. It arrived in 2002 and at one point ran three locations across the Mile Square. By 2023, 518 Washington was the only one left. In August 2023, the owners closed it with a letter that opened, "It is with great sadness that we announce our closure of our Hoboken Charrito's location." The restaurant was BYOB for much of its run, and Hoboken Girl remembers it for its guacamole, enchiladas and tacos. That made it a dinner destination rather than a quick stop.
At the 5th Street corner, il Laboratorio del Gelato held 500 Washington until this year. By mid-July, its signs were gone and the windows were papered over. The shop is now listed as permanently closed.
With a gelato counter on the corner and a BYOB taqueria mid-block, the block's two best-known tenants both did their business after work and on summer nights. That combination is what's being replaced.
The two that opened lean toward daytime
Springbone Kitchen came first, at 506 Washington in the former Bon Banh space. It soft-opened on July 7, 2026, and made its official Hoboken debut the week of July 13. Englewood natives Jordan Feldman and Sam Eckstein founded the brand in 2016 in Greenwich Village. Before Hoboken, it had 10 New York City locations and one in Millburn. The entire menu is gluten-free. The kitchen builds its dishes on bone broth, including the rice, and sells protein bowls, smoothies and desserts. Feldman had told Hoboken Girl in September 2025 that he expected to open "early next year," so the opening landed about half a year late. On soft-opening day, the restaurant appeared to have run out of food by 1:30 p.m.
Dän Bakery + Cafe took the corner at 500 Washington and was open for business as of September 8, 2026. The team first contacted Hoboken Girl about the space on May 17, while the gelato shop was still operating. That puts about four months between the announcement and the opening. It's the family-owned bakery's second location after Morristown. The name comes from the Kazakh word for "seed," and the bakery focuses on slow fermentation and letting dough mature naturally. Based on the Morristown menu, expect a Garden Veggie Scramble, a Caprese Cheese Sandwich on house-made bread, and spinach-and-feta phyllo pastries, plus croissants, cakes and cookies.
Put the two together and the lower half of the block now covers breakfast through lunch. The corner that sold gelato sells croissants and scrambles, and the space two doors up sells broth bowls where Bon Banh used to be.
The two that haven't opened would bring the evening back
The other half of the block is where the timelines have stretched.
The Kati Roll Company is planned for 514 Washington. The Hoboken Historical Commission heard its signage application at its August 3 meeting. Jersey Digs reported on August 10 that no opening timeline had been announced, and no later update has surfaced. The brand is a fast-casual Indian restaurant. Payal Saha started it in Greenwich Village shortly after moving from Kolkata to New York in 2002. The Hoboken location has a close relative in the area. Jay Sorathiya, who operates the New Jersey franchise, opened a Kati Roll Company at 924 Bergen Avenue in Jersey City this summer and will run the Hoboken location too. Signature dishes include the Achari Paneer Roll and the Unda Chicken Tikka Roll, along with house-made Alphonso Mango Lassis.
The 514 storefront has turned over often in recent years. DoneRight Doner Kebab was there for about a year, and Brooklyn Dumpling Shop was there before that. A brand that has run in Manhattan for more than 24 years, with a sister location already open in Hudson County, is a different kind of tenant than the ones that cycled through.
Cuban Pete's at 518 Washington has been in progress the longest. The BYOB Cuban restaurant from Montclair is moving into the former Charrito's space. Hoboken Girl's August 11, 2026 Washington Street roundup listed it under "Coming Soon" with work still underway, and the outlet's September 28 fall roundup said the same. The fall roundup also lists Four Winds, a trading card and board game shop, at 518 Washington. Its linked coverage is filed under Jersey City, and the listing doesn't say how the two businesses relate to the address. Contractors had been seen inside the Cuban Pete's space in July 2026. Since Charrito's closed in August 2023, the storefront has gone more than three years without a restaurant. Cuban Pete's has not announced an opening date.
When both restaurants open, the block's mix will look a lot like it used to. The corner and the next storefront up will handle the morning and midday, and the two storefronts farther along will cover dinner. Until then, the half of the block that used to be busiest at night is the half that's dark.
What surrounds the four storefronts
Not every address nearby is changing. On the odd-numbered side, Mochitori at 529 Washington is still operating. Hoboken Girl listed it in August 2026 for its mochi doughnuts, Korean-style hot dogs and bubble tea. Mochitori is open in the afternoon and evening now, while 514 and 518 are still closed.
Just past 6th Street, Greens, Goods + Grill, also called G3, is coming to the former Giovanni's space at 603 Washington. It combines a convenience store with a fresh kitchen, and it hasn't announced an opening date. G3 is quick-stop and health-focused, the same direction Springbone and Dän took on the 500 block.
The 500 block is part of a larger turnover. Hoboken Girl's August roundup counted 13 businesses along Washington Street that had recently opened or were on the way, from Atomic Wings at 410 to Sober Shot at 1200. Elsewhere on the street, the changes are spread out one address at a time. Between 5th and 6th, four adjacent storefronts are changing within a few months of each other.
Walking the block this month
Here's what is actually open on the 500 block as of early October, from south to north:
- Dän Bakery + Cafe, 500 Washington. Pastries, breakfast plates and sandwiches at the 5th Street corner.
- Springbone Kitchen, 506 Washington. Bone broth, protein bowls and smoothies, all gluten-free.
- 514 and 518 Washington. Neither is open yet. Kati Roll's signage application was heard August 3, and work is underway on Cuban Pete's.
- Mochitori, 529 Washington. Across the street, with mochi doughnuts and bubble tea.
The next change will come from 514 and 518. The Historical Commission heard Kati Roll's signage application on August 3. At 518, work has been underway since at least July. Neither has announced an opening date.
When a block of Washington Street turns over this quickly, it changes how the homes around it show and sell.
